A small tempura shop in the Tsukiji outer market. Seafood bought each morning at the market, and pesticide-free vegetables from a contracted farm in Chiba, fried crisp in sesame oil — a light, crackling batter and the fragrance of toasted oil.

The frying is done by the owner, Takeshi Kurokawa. Vegetables arrive three times a week from a farm in Kamogawa, Chiba — the best of that day. At lunch, a tendon straight from the fryer, one bowl at a time across the counter.
